Cinnamon Cookies

I love cinnamon. It is my number one spice I use. I drink it in my coffee every morning. Maybe it’s because I am Danish. I once read a news story from Denmark in which there was a cinnamon shortage. Also when you turn 25, if you’re unmarried, it is customary in Denmark for your friends and family to cover you in cinnamon. How much fun! What a dream. Anyways I love these cookies. They are so simple and are very wintery and homey tasting. I eat these with coffee in the morning.

  • 1 1/2 cups of almond flour ( you could be fancy and make your own almond flour but I buy almond flour at the store.)
  • 1/2 cup of flour
  • 2 cups of powdered sugar
  • 1 heaping tablespoon on cinnamon
  • 2 teaspoons of lemon juice
  • 2 tablespoons of water
  • 1- 4 oz container of apple sauce (see notes below)
  • a dash of nutmeg
  • 1/4 teaspoon with salt
  1. pre heat oven to 350 degrees
  2. mix the flours in a big bowl
  3. add the powdered sugar
  4. add the cinnamon, nutmeg, salt and stir to combine
  5. add the wet ingredients – water, lemon juice, and apple sauce, stir to combine
  6. this dough is STICKY, once combined flour your hands and a cutting board and mold the dough into a ball.
  7. once in a ball sprinkle the top with flour and flour a rolling pin and roll out to about 1/4 inch thick
  8. whatever cookie cutter you like, dip in flour, and cut out the cookie shapes you want
  9. place on an greased baking sheet and bake for 8-10 minutes

these cookies are soft cookies! so don’t be alarmed if they feel softer than usually. They harden up when they cool.

*note applesauce: I will tell you vegan baking is not always the easiest. It is hard to bind ingredients without eggs. However I have found that applesauce works ahhhmazing as a binder. Some recipes will lie to you and say lemon juice and water work but let me tell you, they don’t. Just give the applesauce a try!

Icing for the cookies

  • 2 cups of powdered sugar
  • 2 teaspoons of lemon juice
  • 2 teaspoons of water

mix the lemon juice and water into the powdered sugar and keep mixing until you get the consistency you want! if you want thinner add more liquid.
