Want to know a fun fact about me? I think I have eaten only one burger in my life. Never ate them, never liked them. So when we decided to go more plant based I thought how delicious we can just eat veggie burgers. Turns out a lot of options at the store have eggs in them, or they just taste bad. Here is a simple recipe that takes no time to make and makes 4 burgers
- 1 14.5 can of chickpeas/ garbanzo beans
- 1 tablespoon of flax seed
- 2/3 cup of veggie brother
- 2 tablespoons of soy sauce – see note below
- 1/3 cup panko bread crumbs
- salt and pepper
- 1 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 cup of panko for breading
- preheat oven to 350 degrees
- drain and wash a can of chickpeas/ garbanzo beans
- while the chickpeas are being washed in a a colander, I make a flax egg, it is 1 tablespoon of flax seed meal to 3 tablespoons of water. Mix and let sit for 5 minutes or longer
- place the cleaned chickpeas into a big mixing bowl and smash them up the best you can. It should be a pasty like substance with not round chick peas anymore. I use a potato smasher, I used to use just a wooden spoon, it is a work out
- add the veggie broth, soy sauce, spices and flax egg and mix all together in the bowl with the chickpeas
- add the 1/3 cup of panko and mix
- get a plate and add the 1/2 cup of panko to it, this will be where after you mold the mix in burgers you dredge the burger to get it coated in panko
- divide the chickpea mix into 4 quarters, make into balls and flatten out to burger shape
- dredge in the panko
- place of a oiled cookie sheet
- cook for 15 minutes and flip and then cook again for another 15 minutes on the other side
I eat these burgers with home made French fries, and sometimes on top of salads.
